Quesadillas! Fast, Easy and they Love them!

Serves: 6 – 8   

Ingredients                

4 Chicken breasts or thighs or any combination. You can use sliced beef, or ground beef, , ground turkey, shirmp or fish (we use fish sticks).

2 tablespoons of diced garlic

1 diced onion

1 can corn (this is the price for 1 can–look for bulk prices in your local stores)

1 can diced green chilies (bulk price)

1 can sliced olives (bulk price)

1 can red kidney beans (bulk price)

1 can black beans (spicy or plain) (bulk price)

1 package of dirty rice (price for 1 but I buy in bulk)

2 cups of water

1 package of soft tortilla shells These are the carb smart tortillas. We eat the 1 Net Carb Tortilla’s They’re small but we make more than one!

2 packages of mixed Mexican shredded cheese This is for 12 packages, so 6 meals…or you can just buy one. Remember Cheese freezes!

Directions

Dice and brown meat choice. Add garlic and onions. Cook until done.

Add all other ingredients and cook on medium heat until rice is done about 45 mins.

Lay out tortilla and spoon the cooked ingredients onto one side. Sprinkle cheese over the entire mixture.

Fold tortilla in half and place in George Foreman Grill or in a skillet and brown. (I like this George Foreman because the plates come out and make it easy to clean! )

Slice into triangles. Enjoy!

This recipe will make about 12 quesadillas.

Tips: You can make ahead and freeze. Wrap in foil and bake in the oven when thawed.

Or freeze just the mixture to use another day for a fast meal. (You can freeze the tortillas, warm up in the microwave wrapped in a moist papertowel.

*Buying in bulk not only saves money, but fills your pantry. Having these items on hand allows you to make a healthy, filling meal in minutes.
