Taco Tuesday

This recipe is so fast and easy, you can put in the crock pot while you’re making breakfast and eat it for lunch or dinner OR BOTH!

We live such busy lives, but nutrition is still a vital part of our days. So here’s a recipe that will save you time and sanity. This recipe is so versital you can build it a dozen different ways and they’ll love it! I often use left over meat from the day before to build this fun meal! I taught my kids (and students) how to make this and keep the ingredients available so if I’m running late to get home, they can make it. Designate Taco Tuesday and you’ve got one day of cooking down for the week!

*Crockpot on the counter and throw in these ingredients: *(I like this crockpot because you can snap the lid closed in case you’re traveling)

1 can red beans

1 can black beans

1 can of corn or 1 cup of frozen

*1 can of diced green chilies

1 can of sliced olives (small or large to your taste) (the link price is for 12 [good deal!] trust me you’ll use them)

3 cans of dices tomatoes (we like the greenchilies & chipotle peppers)

*Cilantro 1/2 cut chopped

1 green pepper – diced

1 red onion – diced

2 envelops of taco seasoning (or salt/pepper/cumin to taste)

Meat browned – diced chicken, or hamburger, or turkey burger or diced beef or sausage (they all taste great!)

Turn the crockpot on and it’s ready to eat in an hour…or hours later when you need it.

We layer the soup with chips on the bottom of our bowl, soup, and then top it with cheese and a tablespoon of sour cream. But it tastes great all by itself too!

This Freezes great! I freeze mine in this silicone 1 cup ice cube trays so later I can decide how much to warm up!
